Allergies to Kiwis

Variations in the protein content of kiwi fruit could have major implications for allergy sufferers, suggest a study. The fruit has previously been identified as an important source of food allergens, and several allergenic proteins from kiwi fruit extracts have been already identified. What this new study shows is that the protein content of kiwis varies according to ripeness and the extraction processes used post-harvest. Control of these measures may allow the production of extracts with the appropriate amounts of protein/allergens to address specific requests.
