Alternative to Pasteurisation?

One drop of chitosan added to a litre of orange juice could replace the need for pasteurisation, claim researchers from the Dublin Institute of Technology. Chitosan, an ingredient extracted from fungi cell walls, has the effect of reducing bacteria and preventing the juice from going brown. The research opens up the possibility of using novel sources as natural alternatives to synthetic preservatives. The researchers admitted however that further studies are required before this particular method of preservation is put into practice.
