Spanish researchers claim they have found ways of isolating the proteins found in lupin seeds and that their discovery could lead to lupins rivalling soy beans as a high protein and low fat alternative to meat. Lupins, which are well suited to the climatic conditions of the Mediterranean, are usually used in animal feed as their taste is too bitter for most humans. Once the bitterness is removed however, claim the scientists, lupin seeds have the potential to become a highly marketable product for health conscious consumers.
