Salt Reduction Examined

Fat micro-crystals could help control the release of salt in foods and thus help food manufacturers cut the amount of salt in products, according to a new study. Scientists from the Department of Chemical Engineering at the University of Birmingham in the UK found that fat crystals containing water and salt are a good vehicle for slowly releasing salt. The findings have been published in the Journal of Food Engineering.
