Shellfish Processing Danger

The level of certain biotoxins in shellfish could double during industrial processing and moreover, one of the major test methods used to determine the level of marine toxins in shellfish is fundamentally flawed - these are the principal conclusions of a new report from the European Food Safety Authority (EFSA). The EFSA has therefore called for further research into biotoxins and shellfish in order to protect consumers and plug what it describes as ‘knowledge/data gaps’.
