Spanish oak trees, used to provide Iberian pigs with the rich acorn diet that helps produces the famous Jamon Iberico, are under attack from a strain of Australian fungus. The fungus attacks the roots, choking off the tree’s water supply. A biology professor says that soil erosion, longer droughts and air pollution have all been contributing factors to the spread of the plague. In addition, orchards have been over-exploited.
